Here is what you need to do.

1. log on as root
2. vi /etc/sysconfig/network
3. add/modify 
HOSTNAME=your host
NISDOMAIN=your domain.

I assume you have a static ip and not using DHCP.

I use hostname (name) and domainname (name) and it sets it, but after I 
reboot, they both change back to what they were before.

I don't have redhat-config-network on my machine.
