There isn't one. RH didn't think much about this before release. You can either manually edit the CATEGORIES field in each .desktop file. Or you can find a way to update to gnome 2.0.2.
Nautilus 2.0.6 cannot edit the menu, only display the contents. 2.0.7 has this bug fixed. For now, if you want to edit the menu, run KDE and use their editor. Won't effect the changes in Gnome, but hey, at least it will work. Redhat should have thought about this before releasing a 1/2 functional PRoduct.
