Menu editing is not complete in RH8 (done in current gnome), but to change these the easiest would be for each extras item, look in the properties for the program name, then do locate <program name>|grep desktop then edit this file and alter the categories line to match the sub-menu where you want it (look in a desktop file that shows up in there already) > Where I find the menu manager?
