With hundreds of domains in one config (if you're virtual hosting many sites), could take Apache quite a while to restart. We had machines at XO which had several hundred virtual hosts and they'd take minutes to restart Apache if we used hostnames in the config w/o including the hosts in /etc/hosts (not to mention the DNS traffic).
