Did I misunderstand your question? Do you already have Subvolumes defined?

If so, I think what you want are scripts. With scripts, you can have
different sets of Subvolumes go to different sets of backup sets. To learn
how to create scripts, see p. 111 of the Retrospect Express User's Guide.

If I'm still misunderstanding what you're asking (not impossible, trust me),
