Say the metastore DB admin has created a place to save the data of all
tables by default. This applies to all spark (and other) jobs that use the
metastore.

Now if a particular spark job wants to save data to another location for
all its tables, it can override only that param via hive-site.xml (or SET
command) and get the data stored elsewhere. So the spark app writer gets
flexibility in choosing the data location.
