Create your own repos with the versions you want. Update yum.conf to use those repos instead of RedHat's repos. Untested...

I've turned off yum's auto-updates but since these machines are RHN-registered whenever someone types 'yum install somepackage' it will get the latest version from the updates, not the one that comes with 5.4. We'd like to keep the machines RHN-registered for support and management, is there anyway to restrict them to just packages from 5.4?
