Create your own repos with the versions you want. Update yum.conf to use
those repos instead of RedHat's repos. Untested...

We currently have several RHEL5 machines that we want to have a manual
updates-only kind of policy on them. This means that they were installed
with a particular version (in most cases 5.4) and we want to keep them
that way.

I've turned off yum's auto-updates but since these machines are
RHN-registered whenever someone types 'yum install somepackage' it will
get the latest version from the updates, not the one that comes with
5.4.

We'd like to keep the machines RHN-registered for support and
management, is there anyway to restrict them to just packages from 5.4?
