Unsure about modifying default configuration using XML, however, you can
modify the guest XML model as virtio then redefine the guest XML using
virsh. libvirt appears to load the guest XML as part of the initial install
so in order to have your guest XML changes take effect you must do define
it again like:
- virsh define /path/guest.xml
where guest.xml has:
<interface ...>
<model type='virtio' />
</inteface>

Its /etc/libvirt and I've been thumbing through those XML files a lot.
But I don't see how to specify or change the default if that's even
possible. Google hasn't been much help either. This is one of the very
few things I have to go back and change by hand after the install is
finished and I'd like to be able to include it with our provisioning
tools.
