You may be able to enable menu editable accelerators in your window manager. For example, in xfce you can enable menu accelerators (Appearance->Settings) and then while you click on a menu in a gtk application and hover your mouse pointer over this menu item in a drop down menu (Control->Play or Increase Volume or Decrease Volume, etc), you can then hit the key or key combo to reflect that command.
Maybe find out how to enable it in your window manager and then try this on the menu item. Just an idea.
