Well you have not been shown the correct way to rip FLAC.  Are you
using EAC.  If so you only need EAC and the flac encoder installed,
however the only app you need to tweak is EAC.  And a simple google
search will lead you to: http://www.saunalahti.fi/cse/EAC/index.html

A very good guide to be up an running with EAC in a heart beat.  I only
have to have to load EAC and press 1 button to have my music rip to
flac.  And if you are bothering with a lossless format you better use a
ripper that can handle secure mode, I am not sure WMP does secure mode.

Now for simplicity yes WMP is the way, but if you care enough to do
lossless, simplicity should not be high on your ranking of features.

As for image artwork their are many programs that can simplify getting
the artwork for you, just google for it.
