Right. The strange thing is that for another file, slimserver reads the
tags as I entered them via mediarage (allegedly as id3), but they don't
show up as vorbis comments.
The Bruckner-Sinopoli file that I mentioned earlier is an example. Here
is its metaflac --list data:

At this point I have to totally guess: maybe for some reason the id3
tags did get slapped on the flac file, and for some reason the
slimserver sees them in this case and not in the others.
The process was working well for my pop songs but not at all for these
classical tracks that have much longer filenames. Maybe that's the nub
of it; maybe the short filenames make a difference.
