Now go to the Filename tab.  Here is where you build up a string that
tells EAC how you want to name your files.  I use:

%A - %Y - %C\%N - %T

This gives the directory structure I talked about above.  If you would
rather have Artist\Album\Track # - Song Title, use:

%A\%C\%N - %T

The slashes break things up into directories (folders).  EAC creates
the directories for you.  Once you've got it set up, ripping is as easy
as putting in a CD, making sure the freedb information is correct, and
telling EAC to rip.  When it's done ripping, put another CD in and rip
that one.  Don't close EAC until all of the compression tasks are
complete (you can see how many are remaining in the status bar). 
Things are a bit more complicated for Various Artists CDs, but this
will get you started.
