In the advanced tab of the preferences, set the import method to MP3. 
Then go into your library select a bunch of songs and then right click
and you will see an option "Convert selection to MP3".  Select this and
it will transcode all your selected songs to MP3.  If you had selected a
different codec (including Apple Lossless) in the preferences, the
"Convert selection to ***" will automatically change to the selected
codec.


This feature was very convenient for me.  I ripped my CDs using Apple
Lossless and then later on used the convert to AAC for my ipod Mini.
