As funkstar says, Browse Music Folder (deliberately) ignores tags and just reads what's in the file name. One good use of this feature is to allow you to immediately get to something you've just ripped, without having the trigger a rescan of the library. It was also done this way for speed, I believe.
One workaround - though it may be too late if you've already finished ripping - is to include the track number in the file name, eg "01 - some song name.flac" This has the added advantage of giving the right order when you are using something completely dumb like a file browser. I'm not sure that having multiple hard drives makes a difference - you've presumeably used links to make it all look like one directory to slimerver anyway. But I do appreciate the additional classification you've introduced under artist... right now the only thing you can do in slimserver is to abuse the "genre" tag by putting extra values in it and then browsing for them. I know this isn't very close to what you want! There are some enhancement requests to allow more flexible browsing, but no sign of them being implemented yet.
