I follow a very similar process to Steve - a couple of things to consider:
Make sure you have the latest beta of Picard from the MB website (under News) - earlier versions have a tendency to crash fatally ! If I apply replaygain using Foobar2000 and then run the files through Picard, Picard deletes the replaygain info. I'm not sure if this is my setup or just the way it works, but I have to use Picard first, then Foobar to apply replaygain, then Tag & Rename to embed artwork into files. A bit of a pain, but the results are well worth it. I back up daily at the moment, as you can imagine...
