When using EAC to rip to multiple files most people choose to append
between-track gaps to the end of tracks.  For instance, if there's a
1.5 second gap between tracks 2 and 3, that 1.5 seconds is added to the
end of track 2.  This way, when playing back the files from the computer
in the original track order, the gaps will be exactly as when playing
back the original CD.  If there's no gap between two tracks, then no
gap is added to the end of the track and playback of the two tracks in
succession should be gapless.

The creation and use of CUE sheets when ripping to multiple files is
mostly for the purpose of burning a CD from the individual files if you
choose to do so at a later date.  In EAC, if you create a non-compliant
CUE sheet, then burning software that understands that type of CUE
sheet can set the CD indexes the same as they were on the original CD.
