If I'm not mistaken (and I could be) then the little red 'x' is more of an indicator that the web server couldn't serve the cover art thumbnails, rather than SlimServer being unable to find the artwork. If SlimServer can't find the artwork then you'd see SlimServer's 'missing cover' image instead. So SlimServer _thinks_ it can serve up the image but for some reason is unable to.
The way SlimServer works is that it actively generates resized thumbnail images from your full sized cover art the first time you (your browser) requests the thumbnail, then caches them for subsequent requests. My guess would be that your server is very slow in generating the thumbnails, or perhaps very slow to retrieve the artwork files or the cached thumbnails from wherever they're stored on disk or on your network. Try right-clicking one of the red 'x' images and select 'show picture' and see if it can be displayed.
