Hi well, I've no answer to this puzzle at the moment. However, if this was my system, I would proceed by setting up a separate folder with just a couple of albums in it (one of the offending Johnny Cash albums and something else with Artist beginning with something from D to I).
Then point Slimserver at this folder, do a full wipe and scan, and see what you get. Now, with a much smaller library, you can easily try out different things: for example turning on various logging options and having a look in the logfiles to see what Slimserver thinks it is seeing. You could also have a look directly in the database itself with SQLyog. Oh, and make sure you don't have any integration with iTunes or MusicIP turned on.... or any playlists that are visible to Slimserver ...
