You may also want to google for "MAREO" which will allow you to rip to multiple formats.
I believe you configure it in EAC as a user-defined encoder and then assuming you have configured MAREO properly it will then perform the required actions. I'm not quite suire how it works but would guess it uses the ripped WAV file as the basis for each of its encoding operations. The downside of that approach is perhaps that you may need to tag two sets of files (i.e. both the MP3 and FLAC files) separately.
