mp3tag will do that for you. The simple way is to load up your entire library and sort by genre. Then for each genre that you want to change to "Rock", select all the tracks and change the tag.
The more sophisticated way of doing this would be to use the regular xpressions feature of mp3tag to change any value that contains Rock to be just Rock, but TBH unless you have a very large library withmany variants of Rock you will probably find the first way quicker.
