At the risk of getting fanatical about it, try dBpoweramp Reference if
you're on Windows; free trial, full version costs (sensible) money.

Just install the multi-encoder codec (a simple Windows .exe installer)
then you can rip to any two file formats you can think of, at the same
time, using any set of drive paths, file naming conventions, tag
manipulation etc, DSP effects etc etc.

eg you could rip FLAC into one directory, with whatever tags you like,
saving the artwork as folder.jpg and at the same time rip LAME mp3 into
a seperate directory, with different file naming scheme/tags and
embedding the art in the files.

It's so good at this sort of thing it's silly.
