There are several ways. The simplest is to use the 'Extended Tags' dialog. That's reached by highlighting one or more files, and using the 'paper and pencil' icon, or by using the menu View > Extended Tags..., or Alt+T, or right-clicking and selecting 'Extended Tags...'. You can edit existing fields, add new ones, delete fields, etc. Another way is to add new field(s) to the Tag Panel on the left by going through Tools > Options (Ctrl+O). You can also edit data in the columns on the right if you add your field(s) to the display. Right-click in the column headers and select 'Customize columns...'. You can probably figure out by the existing columns what's expected to create a new one. I find the columns are most useful for data that differs from track to track, such as title, artist (on compilations), and track number.
