It turns out you don't have to delete all your album artist listings. Squeeze Center just needs to see a single track with a blank album artist to read the artist field and connect it with all albums and tracks with the same artist, even though those tracks also have an album artist listed.
I used this discovery as the basis for a work-around for displaying my classical collection consistently on both my iPod and Squeeze.
