If you have a spare computer laying around and want to dedicate a system to ripping, I suggest building a Vortexbox. It takes less than an hour to set up and it has automatic ripping, tagging, and organizing. You can just insert a CD, walk away, and then come back when it is done. Rinse and repeat...
For organizing, I chose to organize each album in their own folder in the main music folder. This way, when I search in Windows explorer, I can sort by folder and see all albums by an artist.
