'bliss' (http://www.blisshq.com) does this. If you already have a folder.[whatever] image file it will re-use that, but then allow you to change all the art for a particular album all at once.
Alternatively you can tell it to save to cover.[whatever] instead and then clear up the folder.jpg files afterwards.
