winamp isn't hard to find, and is still free:

WMP shouldn't be doing anything to your folders, and if it is, you have
a bad option turned on.

learn to rip with EAC.  monitor the rip folder with WMP, (only add
missing tag info, and don't rearrange folders, etc), and manage with
winamp (and turn off all the guessing tag crap in winamp), and you'll
be set.  use mp3tag for thorny issues if needed.

been doing this for years, mostly works great.
