Gary, OS X doesn't use the concept of drive letters, but it seems as
though Wineskin takes care of that for us. When I start this Mac
version of mp3tag and use 'File' -> 'Change directory...' the browse
window shows all my mounted drives as subdirectories of Z:\Volumes.

The key seems to be to get the drive showing up as a Device (in the left
panel of the Finder). I did this by browsing to the machine with the
drive I wanted (e.g. 'Finder' -> 'Go' -> 'Network') and then just double
clicking on the drive. This made it show up on the desktop and under
the list of Devices, and then it showed up in mp3tag under Z:\Volumes
