One interesting point is that ffmpeg-3.4 is the latest branch from the
ffmpeg-3.x ABI, so it will have more feature than 3.3x while having
the same binary compatibilities.
As such, I'm fine to have ffmpeg-3.4x if possible.

Now what would be reasons that could prevent ffmpeg-3.4x updates for EL7 ?
- Too much missing deps from RHEL upstream ? For that a scratch build
in koji should be enought to test.
- Some internal changes in ffmpeg that would make it difficult at
runtime. There it's more difficult to test because there is a need to
rebuild the ffmpeg dependencies or at least to do basic runtime tests
with dependencies rebuilt with ffmpeg-3.3 and ffmpeg updated to 3.4.
What makes this choice difficult is that we don't have a fedora branch
to pick as a base where we know that a particular package works as
appropriate with ffmpeg-3.4x (given f27 was with ffmpeg 3.4 and fc28
4.0).
So that's the main reason I consider keeping ffmpeg-3.3 as a relevant
choice, based on our maintainance history.

It may be possible to have the ffmpeg "last branch of the previous
ABI" updated in EL as a general rule, so we don't have an arbitrary
choice for the next time.

For thoses that would want the latest ffmpeg there, we should probably
go with epel-next, software collection or modules, docker (or even
ffmpeg-latest) etc...
But that's another topic.
