It's certainly possible, but I'm not sure it's worth the work for the
likely relatively short period of time it would be needed. There's also a
unifi-lts package but it's even older (I think it's last version that would
work with CentOS 7).

Thanks for the vote of confidence :) But there's always going to be cases
where some users want to stay on the bleeding edge and others prefer to
stay a little behind.

Worst case you can block the package from updating through DNF until you're
ready to make the jump.
