Yes, with dynafiles you can use anything in the message, including the hostname to sort/filter the messages.
If the receiving system is rsyslog, the only thing you are changing by using omudpspoof instead of plain UDP is that $fromhost-ip would be different. the contents of the messae would be identical either way.
