John Allen did a wondrous job doing just that in HO with his Gorre and
Daphetid. It is still the stuff of MR benchmarks and legend! I always
thought it would be cool to model the GWNR or the Great White North Railway
and just pull beer trains with working spigots! Beauty, eh?
Yep... and I've just recently got to see and lay hands on some of John
Allen's actual G&D models at the train show here in Savannah... some guy had a
box full of them and was selling them... passenger cars... they were brass if I
remember correctly.
But lets not forger about the good-old Franklin & South Manchester that the
owner of Fine Scale Miniatures (George Sellios) is building up in the Boston
area... it easily rivals the G&D in my opinion... BEYOND incredible!!! (See
below)

As for modeling beer trains in the great white north... one thing about it...
you'll have no problem keeping the beer cold! Your reefers wouldn't even
require ice doors or (depending what era you model) cooling units... just holes
in the front and rear of the car! LOL!!!
