Unfortunately, I think you can't.  You'll have to  make a list v of
the entries, then do A = matrix(n,v)

Regarding random_matrix, if you do random_matrix(K,...) where K is a
field, then each element of the matrix
is computed by calling K.random_element, so you should see the docs on
K.random_element.
