I use Motherboard Monitor for that. You can find it at http://mbm.livewiredev.com. It runs on each machine and monitors fan sensors, temps, etc., and has its own built-in alerting, html file logging, and more. It's free. The downside is that you have to install it on each machine. Most motherboards work with it to varying degrees. If it's a "store-bought" server, like an IBM, Dell, Compaq, etc., then the big manufacturers all have free server-monitoring tools that allow you to monitor fan speeds, temps, case openings, etc. They're all wildly different.
