Because XML is often a solution in search of a problem. :-)

Seriously, some find it useful for data transfer and manipulation.  In theory you could probably easily combine it with an XLST and get your webpage right from that....

Please define "pig".  I've got over 1500 checks and don't share that observation. 
 
The config file is just a delimited text file, you can play with it in whatever program you want.  You just do so at your own risk.
 
Using a database for the configs would be nice but I would rather have the option to use it or a text file(just to make it more complicated to program).  A text file is the easiest database to deal with and quite easy to back up.  Small sites and many users may prefer the simplicity of a text file.

The user interface is a bit of a pig once you get more than twenty or so
checks in place.
 
I wish there was a data export/import mechanism so I could copy the
data into Excel or some kind of database, play with the entries, and then
re-import it into SA.
 
Even better would be if SA kept the data in a proper database (SQL Server,
MySQL, etc.) rather than a text file. That way, people could use their favourite
database tools, write Web interfaces, etc. etc.

Yes!  That is my biggest complaint about Servers Alive. It is extremely difficult to manage in a datacenter environment when running as a service.  Having to stop the service to access the management interface is very tedious.  I would also like to have a nice API (Other than telnet) that we can integrate into our provisioning applications so that checks

automatically created when new servers get deployed.
