It all depends on what you want to monitor.
If you want to know if the Exchange services are running then you should use the
NT SERVICE monitor, if you want to check if mail can be send/received via
standard internet protocols then you can use the SMTP2POP3 COM checker.
Probably there are a lot of counters that can be checked via the NT PERFMON
monitor too.
And ofcourse SNMP is always an option (that is IF you have the Exchange "part"
compiled into the SNMP agent that runs on the Exchange server).
