If e-mail went through your server, it would be logged.  Check your logs
for the e-mails in question.  If you do not find them, then the headers
were forged.  If this is the case, you really have no recourse as that
is something that happens on a system that is not under your control.

I'm getting a lot of "bounce" emails in response to spam that was sent
by someone else using my domain name in the From: header.  I don't think
they're relaying through my server, but how can I tell for sure?  And if
they aren't relaying through me, and are just using false headers, what
can I do about it?
