For production use stay with the versions marked that way, beta's and
previews contain new features which are being developed which might not
be as stable.
In answer to your question, "is the mail server finished" yes and no. The
server can be used and is fully functional and stable, no because it is
always being developed further. I suggest until you are comfortable with
the product stay with the production versions then if you wish try the
beta's (always be prepared to roll back).
