I think, now you have two installations:
1) installation that you've build by yourself, this is installed in /usr/local and build without sane-escl. Probably because some required libraries were missed at the build time 2) installation from your disro, which doesn't include sane-escl, because it is old version of sane-backands

The sane-airscan package that you've have installed from my binaries automatically integrated itself with sane-backends from your distro, but applications use sane backends that you've built by yourself, so sane-airscan is not activated.

To verify this idea, please show us output of the following two commands:

which scanimage
ldd `which scanimage`

And also what I've asked you in my previous message:

SANE_DEBUG_DLL=255 scanimage -L
