For payment I'm thinking some custom payment modules modeled off of the COD module -- 'Pay by check', 'Pay by In-Store Credit Card' -- where the payment amount would be typed in on the order page. So we don't need to 'process' anything really, just record the payment as having been cash, check, etc.
