Hello Kevin,

I just can tell you that I remember I have encountered similar issues
(slowness) when I added product variations. As you can see in the
satchmo_log the products get created really slow. But they get created.
So watch the satchmo_log and do other work at this time. :-)

I can't tell you whats the reason for the slowdown, but encountered the
same performance as you did.
