I second the centralized syslog. It's the one thing everybody across the board could benefit from. We ended up rolling our own solution with rsyslog mysql and phplogcon. It's highly flexible totally asynchronous and tolerant of even the main rsyslog box being down. I think phplogcon could be improved on but the rsyslog + mysql has rocked.
