Hi, sorry, I've answered my own question with some testing but will leave 
this up to help others.

Yes, it's possible, seems the 10:1 (IOPS:GB) ratio is a required minimum 
but larger volumes can be configured (i.e as below with a 500GB vol @ 1000 
IOPS).
