It was probably removed due to the upstream EL's focus on GNOME and GNOME applications; kstars is KDE, and KDE is a second-class citizen in the upstream and has been for quite a while. So trimming down KDE so that more GNOME stuff could be included would fit upstream's model.
If you want the same interface and version as you are used to in EL5, please see the Trinity Desktop repository for packages: https://wiki.trinitydesktop.org/RedHatInstall
The trinity-kstars package and its dependencies from that repo install well on EL7.
