Chris,
I personally would recommend Redhat 7.1. I too am relatively new to linux
(3 years) and still have a LOT to learn.
I have tried mandrake 8.0, and found it dead easy to setup and get working,
even persuaded some of my MS only colleagues to change, and they had no
problems with install either.
I then removed the install of Mandrake (I have never liked YaST / YaST2) and
installed Redhat 7.1. I found this just as easy to configure, and all is
still well after 3 1/2 months, running a firewall, and various servers both
at home and work.
I would suggest, instead of taking our word for it, installing and using
each distro, and making your own mind up. I would also suggest getting a
book on Linux (whatever distro you decide to stick with) and a BIG jar of
coffee :)
