Acrobat 8 and 9 both have a booklet feature and I can't remember if Acrobat 7 had that feature. I'm not sure if free Adobe Reader 8 or 9 has that feature because I use the full Acrobat. I think they do.

One of the "easy" ways is to use Adobe Reader, 2-up printing. You will need to do the imposition yourself, ie, know which order pages go in, and what prints on the back of what.
