Hi Julian,
Yes, this is possible.
Go to Preferences (with not document open), and select the Colors tab from
Display. There you can change the Page Fill to Black. You probably want to
change the Frame outline to some color other than Black so you can see them
when they're not selected.
Next, in the Text tab of Item Tools, under Text, change Color and Stroke to
White.
Click OK, and your changes will be saved.
One caveat with this is that, if you export your document to PDF, you will get
a blank page, since the white text is on a white background. So before
exporting, you would need to convert your text to black.
