If you have some experience managing Gentoo on Linux Gentoo Prefix on MacOS might be good enough for you: https://wiki.gentoo.org/wiki/Project:Prefix TL;DR: it's idea is to use EPREFIX=$HOME/gentoo/ for all portage-installed packages.
