Have you tried the binaries rpms contained in the new "Red Hat Application Server" channel? There are so many different versions and combinations of apache/tomcat that there would end up being loads of jk rpms. Its a doddle to build anyway and there are a few out there pre-built. Perhaps once you've built yours you could package it up and release it to the community.
