I would use postfix, dovecot and fetchmail but dovecot is a very good
imap server, look at webmin for administering it, ebox isnt quite there
yet.

Also for groupware look at egroupware, install is very easy and you can
just use your imap server for connect and groupdav for contacts.

I use Dovecot with the deliver LDA hooked into Postfix for my mail
server, running on a P3 1Ghz. My personal mail box is some 825MB
containing ~77500 emails and it runs really well.

I've also been running Dovecot for about two years, and am very happy 
with it. I've only used it for small numbers of users, so I have no idea

instantly responsive even across the Internet, so it seems to scale well 
for height.

I guess it depends on how big an environment you are catering for. For
me personally, I have been using Postfix + Courier IMAP for a few years
on my PIII at home running my personal mail and a few other accounts.
Works perfectly well, and easy to set up. 

I'm not sure how extensible either (Dovecot/Courier) are, but i would
guess that they both handle < 100 mailboxes quite happily. 
(note, that is an actual wild guess!)
