we may be misunderstanding you.
like Charles says, you can just make "pages"...which are static.
Or you can write Posts...and simply hide the date.

the Date (along with tags, categories, etc) is used to help the blog
know how to order all the new content.
you can certainly hide the date on posts.

Hello,

If you don't want your posts to be in order by the date they were
posted... then... why don't you create Pages instead of posts?

Just go to the "Write > Page" page to do that.

Sorry for the newbie question folks.

Every time I create a new post on my blog, Wordpress wants to put a date on it. 
 Is it possible 
to override that feature? I'd like to replace the date with simple text. (I 
don't care if my posts 
are still organized by date, I just want to display text in the place that the 
date normally 
appears)
